This study evaluated the physiochemical changes of one commercial European pear variety ‘Conference’ and Asian ‘Yali’ during 60 days storage at 1 °C. Content organic acids, ethylene formation CO2 were determined using HPLC/UV-VIS GC/FID TCD detectors, respectively. presents an evaluation influence above-mentioned factors long-term on quality parameters, including antioxidant capacity important cultivar.
